Producing a stand out Double IPA in New Mexico is a truly difficult job. “Paying the Devil”, a maritime phrase now in common vernacular, refers to such a task. Our brewer bit the bullet, battened down the hatches, kept his shirt on, toed the line, forged ahead, made headway, kept an even keel, and went the full nine yards delivering a first rate DIPA to fit the bill. Predominately featuring Cascade and Chinook hops, Tim’s double IPA heralds back to classic northwest style hoptastic beers. The nautical depth of citrus, grapefruit, and pine cannot be overlooked. Resinous and sticky, this beer lingers on the palate, but is not without some semblance of balance. Strong, bitter, unforgiving as the sea, Devil to Pay will call you by name… wanting more.
