Sierra Nativo is a captivating Pale Ale that pays homage to the New Mexico brewing scene and highlights the flavors of the region. This batch showcases locally sourced hops from La Capilla Hops Farm in La Cienega, New Mexico. The addition of 25 lbs of fresh locally-grown Chinook full hop cones bring a fresh and distinctive regional character to the beer. These hops contribute subtle pine, spice, and citrus undertones, enhancing the depth of flavor.
Columbus hops ensure a solid, well-balanced foundation of bitterness, while the combination of Cascade and Zappa hops in the aroma provides a delightful twist. Cascade adds its classic floral, citrusy, and slightly spicy notes, while Zappa, one of the few Neo Mexicanus hops in larger production, introduces exciting flavors of tropical fruit, pine, and hints of mint or black pepper.
A malt backbone of Munich and Weyermann Carahell supports this hop-forward profile, with Munich contributing toasty richness and depth, and Carahell adding subtle sweetness and a light copper color. The interplay between the malts and hops creates a balanced yet complex character that honors both the tradition and innovation of New Mexico brewing.
